Homemade Chewy Granola Bars

I've been on a mission to find a homemade granola bar that we would like better than the store bought kind for a while. I've tried making all sorts of them and while they were good, they never "wowed" us. When I weighed convenience and taste and affordability, I decided to just keep buying them. But it's the new year and I'm feeling pretty committed to replacing some of our go-to store bought items with something homemade. So I started scouring the internet for more recipes and then....

And then I stumbled on these. Super yummy and easy to make. Total winner. They're full of healthy stuff plus a wee bit of chocolate to make them really enticing to the 4 and under set.

Seriously. Although she was reluctant at first, I told Neva they had chocolate (seriously, I used the teeniest, tiniest amount) and she hightailed it out of the kitchen with my prop. And a smile.

CHEWY GRANOLA BARS

INGREDIENTS

  • 1 cup natural peanut butter
  • 2/3 cup honey
  • 1/2 cup coconut oil
  • 2 cups oats
  • 2 total cups combination of coconut flakes, sunflower seeds, and pumpkin seeds {or your own combination of nuts and dried fruit}
  • Chocolate, chopped and sprinkled on top

 INSTRUCTIONS

  1. In medium size sauce pan, melt together peanut butter, honey and coconut oil.
  2. Remove from heat and add oats, sunflower seeds, pumpkin seeds and coconut. Stir well.
  3. Press mixture into pan and spread to your desired thickness (we used a 9"x13").
  4. Chill for 2 hours in fridge and cut into bars.

So easy, right? Keep them chilled and enjoy whenever.
