Day Nine: Pumpkin Pie Smoothie

I really do love healthy smoothies. They're a great substitute for ice cream (which is my favorite treat) and most of the time, my kids love them too. The other night, while I was baking some chicken, I threw a few whole sweet potatoes in too. I wasn't quite sure what I was going to do with them and then I came across this recipe in Gwyneth's "It's All Good" book (yes, again. I'm kinda on a kick. I love getting a new cookbook and then diving into half the recipes).

This smoothie is surprisingly light in flavor and super healthy for you. Sweet potatoes are a natural anti-inflammatory and they're filled with fiber which keeps us full longer. They're also full of vitamin A and vitamin E.

GP's recipe called for protein powder but it's not something I typically use so I left it out. Otherwise, this smoothie couldn't be simpler. Combine some cooked and cooled sweet potato in a blender with unsweetened vanilla almond milk, some ice, a pitted date, and a few spices and you've got fall in a glass. Just a much healthier version than you might get at Starbucks (be warned - it tastes healthier too. Much more smoothie than shake).

Pumpkin pie smoothie

PUMPKIN PIE SMOOTHIE (slightly adapted from "It's All Good" by Gwyneth Paltrow) 

INGREDIENTS

  • 2/3 cup cooked, cooled sweet potato (just the flesh, not the skin) 
  • 1.5 cups unsweetened vanilla almond milk
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp cloves
  • 1 date, pitted and chopped
  • 1/2 cup of ice

Blend all ingredients until smooth.  

*As a side note, my blender, which isn't fancy, had trouble with the date. So I chopped it up into really small pieces. Unless I invest in a fancier blender, I might try making a date paste in my food processor. Has anyone ever tried that?
